WHAT DOES THE TRUFFLE SMELL AND TASTE LIKE?

We know that it is difficult to explain what truffles smell like due to the wide range of flavors and aromas they have, but let's get to it.

Not all truffles have the same flavor.

And let's not even talk about the truffle sauce, which has a major component of mushrooms and a truffle percentage of less than 5%, as well as added flavorings.

We have to say that there are about 100 varieties of truffles, all of them with different aromas, flavors, color, appearance and qualities. Many of them have no culinary value, so we are going to focus on the TUBER MELANOSPORUM, which is the one grown here in Teruel. Besides being one of the most appreciated culinary varieties, it is also one of the most accessible to everyone.

The aromatic wheel of the black truffle Tuber Melanosporun is very complex and also difficult to imitate, since it is composed of more than 50 different compounds involved in its final composition, including fruit, butter cheese, caramel, mushroom leather, among others.
