The soil that covers the truffle when it is extracted from the ground helps to keep its aroma and flavor intact, acting as a natural protective layer that favors its maturation. However, when the time comes to use it, it is essential to clean it properly to ensure that there are no traces of soil or impurities that could affect its flavor. This cleaning process must be carried out with special care, since the truffle is very sensitive to both humidity and external odors, which can alter its organoleptic characteristics.
To do this correctly, it is recommended to wash your hands first, then gently brush the truffles, preferably dry, but a little water is fine. If water is used, dry them with a paper napkin. The truffles can be cut or grated according to the dish to be prepared.
